Ingredients:
● Boneless skinless chicken thighs
● Parboiled Brown rice (dry)
● Diced tomatoes, canned
● Tomato paste, unsalted
● Carrots (diced)
● Yellow onions diced
● Fresh garlic
● Black pepper
● Vegetable oil
● Low-sodium chicken broth
● Low-sodium vegetable broth
Instructions:
1. Cook rice in water with bay leaf, paprika and Italian seasoning according to the package
instructions.
2. In a tilt skillet, sauté onions, garlic, carrots and tomato paste in oil for 10 minutes. Add
chicken, diced tomatoes and chicken broth. Cover, reduce heat to medium, and cook
until done.
3. Cool chicken and rice within the sanitation requirements.
4. Portion rice, portion chicken, portion sauce on the chicken, and then freeze.
