Ingredients:
● Chicken thighs cut in strips
● Bell peppers cut in strips
● Canned pinto beans (drained & rinsed)
● Parboiled brown rice
● Yellow onions sliced
● Tomatoes, diced, canned
● Tomato paste, unsalted)
● Taco seasoning (gluten free, <640 mg sodium/Tbsp)
● Garlic chopped
● Low-sodium chicken broth
Instructions:
1. Slice chicken into strips
2. Cook rice according to the package instructions.
3. Sauté onions, garlic, bell peppers & tomato paste for 15 minutes
4. Add chicken and brown until 1⁄2 way done.
5. Add beans, tomatoes, and spices. Simmer covered until the chicken is done. Cool
immediately
6. Portion rice first, then chicken mixture on the side and freeze
