Ingredients:
● liquid eggs
● tomato paste
● Potatoes (diced)
● Bell peppers (diced)
● Yellow onions (diced)
● Carrot (diced)
● Black pepper
● Vegetable oil
Instructions:
1. In a tilt skillet, heat oil, add the tomato paste first and cook for 2 minutes then add
potatoes and carrots and sauté for another 5 minutes, then add all other vegetables
and sauté for another 10 minutes, place vegetables in sheet pans to cool.
2. While vegetables are cooling, add black pepper to eggs, mix and scramble.
3. Cool rapidly, then portion and freeze.
